Preparation

  1. Preheat oven to 200°F or 400°F.
  2. Prepare a baking sheet with parchment paper.
  3. Rinse and scrub the potatoes and cut them in half, length wise.
  4. Rub the sweet potatoes on both sides with olive oil and sprinkle with salt and pepper.
  5. Place the potato halves face down on the baking sheet.
  6. Bake for about 30 minutes or until the potatoes are tender.
