Ingredients
4.4 lbs pork loin with bone (remove the bone)1/2 fresh pineappleOil as neededPotatoes, salt, and paprikaFor the Marinade:6 crushed garlic cloves2 tablespoons red pepper pasteSalt and black pepper to taste1 cup white wine (approximately 8.5 fl oz / 250 ml)Parsley and bay leaves

Preparation
- Season the pork loin with the marinade and let it sit, preferably overnight.
- Preheat the oven to 350°F (180°C).
- Place the sliced pork in a baking dish along with the marinade.
- Add the potatoes seasoned with salt and paprika, and drizzle with some oil and place in the oven.
- Turn the meat halfway through cooking, basting occasionally with the juices that evaporate as it roasts.
- When done, transfer the slices and potatoes to a new baking dish with some of the juices.
- Place 1/2 slice of pineapple between each pork slice and bake for another 15 minutes.
- Remove from the oven and serve.
