Ingredients

1/2 onion chopped4 garlic cloves, chopped1 tbsp olive oil2/3 cups water or chicken broth1 chouriço sausage, sliced2 lbs fresh or frozen green peas thawed3 eggsSalt and pepper to taste

Preparation

  1. Saute the onion and garlic in a saucepan with olive oil for about a minute on medium heat.
  2. Add the sliced chouriço and cook on low heat for approximately 15 minutes.
  3. Add the peas and broth or water and cook until tender and check/add salt and pepper..
  4. At the end, break eggs into the mixture and cook for another 2 to 3 minutes.
