Ingredients

1 kg pork loin1 kg potatoes1 pineapple8 onions8 cloves garlic100 ml white wineOlive oil40 g of margarine1 tablespoon mustard2 tablespoons honeydried rosemarypaprikaSalt and pepper

Get Portuguese ingredients

Preparation

  1. Clean the pork loin and rub it with a paste prepared with salt, garlic cloves (peeled and crushed), mustard and margarine.
  2. Place the pork loin on a baking tray, drizzle with white wine and sprinkle with rosemary, if you can, marinade for a few hours or overnight.
  3. Place the seasoned potatoes and onions with paprika and pepper, around the pork loin.
  4. Drizzle everything with a little olive oil and spread the honey over the meat.
  5. Bake in a moderate oven until the meat is tender (about 1 hour).
  6. Cut meat in slices.
  7. Peel the pineapple and cut into thin slices.
  8. Place the pineapple slices between the meat slices.
  9. Bake for another 10 min.
  10. Serve with the remaining pineapple and potatoes.
