Ingredients

14 oz fettuccine20 raw, peeled shrimp2.2 lbs clams, soaked in cold salted water for 2 hours7 tablespoons olive oil1 bunch chopped coriander4 cloves chopped garlic5 tablespoons white wine1 teaspoon piri-piri sauce (or red pepper flakes)Salt to taste
14 oz fettuccine20 raw, peeled shrimp2.2 lbs clams, soaked in cold salted water for 2 hours7 tablespoons olive oil1 bunch chopped coriander4 cloves chopped garlic5 tablespoons white wine1 teaspoon piri-piri sauce (or red pepper flakes)Salt to taste
Get Portuguese ingredients

Preparation

  1. In a pot of boiling water, add 1 tablespoon of olive oil and salt. 
  2. Add the fettuccine, stir with a fork and cook for 5 minutes. 
  3. After 5 minutes, drain the pasta and rinse it with cold water to prevent sticking.
  4. In a skillet over medium heat, heat 1 tablespoon of olive oil. 
  5. Add the shrimp, season with salt and the piri-piri sauce, and sauté until the shrimp turns pink.
  6. In another skillet, heat the remaining olive oil, garlic, and coriander. 
  7. Add the washed and drained clams and stir to coat. 
  8. Pour in the white wine and cook over high heat until the clams open.
  9. Once the clams have opened, remove them with a slotted spoon and set aside. 
  10. Add the shrimp and pasta to the sauce in the skillet and sauté for a few minutes.
  11. Remove the pasta from the heat and serve with the clams on top.

Notes:

When soaking the clams, make sure to change the water every 30 minutes to remove any sand or grit.

Discard any clams that do not open during cooking.
