Preparation
- Preheat the oven to 350°F (180°C).
- Place the cooked chickpeas in a blender or food processor and puree until smooth.
- In a bowl, mix together the sugar, flour, chickpea puree, eggs, egg yolks, melted margarine, lemon zest, and cinnamon (if desired).
- Stir well until the mixture is smooth and well combined.
- Roll out the puff pastry and fit it into a pie pan, keeping the parchment paper under the dough to avoid greasing the pan.
- Prick the bottom of the pastry with a fork.
- Pour the chickpea filling over the pastry.
- Generously sprinkle powdered sugar over the top—this will help create a crispy surface as it bakes.
- Bake for about 30 minutes, or until the top is golden and crispy.
