Preparation
- Start by mixing the olive oil, vegetable oil, lemon juice, paprika, minced garlic, red pepper flakes, piri-piri sauce to taste, salt, and pepper.
- Crush this mixture well using a mortar and pestle or a food processor.
- Wash the chicken legs, dry them well, and brush them with the marinade you prepared.
- Then, fry the chicken in a little olive oil over high heat for about 6 minutes on each side.
- Transfer the chicken to a baking tray, cover with aluminum foil.
- Bake in a preheated oven at 400°F (200°C) for 30 minutes.
- Remove the aluminum foil, flip the chicken, and continue cooking for another 10-15 minutes.
- Fry the sweet potato sticks while the chicken is in the oven, once done, absorb any access oil on kitchen paper towels and season with salt to taste.
- Serve the chicken and fries hot, accompanied by a salad.
