Ingredients
4 cod fillets1.75 pounds of potatoes2 onions3 garlic cloves3.4 ounces of tomato sauce (about 1/2 cup)6.8 ounces of olive oil (about 3/4 cup)2 tablespoons of vinegar1 bay leafOlives to tasteCilantro to tasteSalt and pepper to tasteFlour for dredgingOil for frying

Preparation
- Soak the cod fillets in water ahead of time.
- On the day of cooking, dry them with a kitchen towel and set them aside.
- Peel and wash the onions and garlic cloves.
- Slice the onions into thin half-moons and finely chop the garlic.
- Peel and wash the potatoes, cut them into wedges, fry them in oil, and then drain them.
- Heat a frying pan with the olive oil.
- Dredge the cod fillets in flour, add them to the pan, and fry them on both sides.
- Remove the cod from the pan and set aside.
- Discard half of the olive oil from the pan.
- Add the onion, garlic, and bay leaf to the pan and sauté until golden.
- Add the tomato sauce, season with salt and pepper, and cook a bit more until soft.
- Add the vinegar, stir, and let it boil.
- Add the cod back to the pan, stir to coat with the sauce, remove from the heat, and transfer to a serving dish.
- Add the fried potatoes, decorate with olives and chopped cilantro, and serve.
