Ingredients

1.1 lbs (500 g) shrimp with shell3 1/2 cups (400 g) cooked white riceChopped parsley or coriander to taste2 1/8 cups (500 ml) water1.8 oz (50 g) onion1.8 oz (50 g) yellow bell pepper, sliced1.8 oz (50 g) red bell pepper, sliced1.8 oz (50 g) tomato, seeded and sliced2 tablespoons olive oil

Preparation

  1. Peel the shrimp.
  2. In a pot, add the water and shrimp shells, and let it boil for 30 minutes.
  3. Strain and set aside the shrimp broth.
  4. In a skillet, heat the olive oil.
  5. Add the onion, bell peppers, and tomato.
  6. Sauté, then add the shrimp.
  7. Stir until the shrimp are grilled.
  8. Add the shrimp broth, cooked rice, and cilantro.
  9. Mix everything well.
  10. Place the rice on a serving dish, sprinkle the parsley or coriander and serve.
