Preparation
- Preheat the oven to 180°C (350°F).
- Grate the apple and the carrots.
- Separate the egg yolks from the egg whites.
- Beat the egg whites until stiff peaks form and set aside.
- Beat the egg yolks with the sugar until they double in volume and obtain a fluffy, whitish cream.
- Add the oil, orange juice, yogurt, and zest, mix well.
- Gradually add the sifted flour with the baking powder, mix, then add the grated apples and carrots.
- Mix everything well and finally fold in the egg whites.
- Pour the mixture into a buttered and floured pan.
- Sprinkle sugar on top and bake for 45 minutes.
- Perform the toothpick test.
- Remove from the oven and unmold while warm.
