4 pieces or loins of soaked codfish3 onions4 cloves of garlic1/2 green bell pepper1/2 red bell pepper2 bay leaves1 tablespoon of vinegar1 ripe tomatoSalt to tasteOlive oil to tasteFreshly ground pepper to tastePotatoes to taste

Preparation
- Bring the codfish to a boil.
- When the water boils, turn off the heat and let the codfish sit in the water for 5 minutes.
- Remove and pat dry with kitchen paper.
- Heat a frying pan with plenty of olive oil, the bay leaves, and two cloves of garlic.
- When it's hot, add the codfish and fry until golden.
- Remove to a serving dish and keep warm in the oven.
- Meanwhile, prepare the onion sauce.
- Slice the onions and garlic cloves and place them in the frying pan where you fried the codfish (remove the garlic and bay leaves).
- Add the bell peppers in strips and the tomato in pieces.
- Season with salt, pepper, and vinegar, and cook until the onion is soft.
- Fry the potatoes in thick slices and place them around the codfish.
- Cover with the onion sauce and serve accompanied by a mixed salad.
