500 grams of red fish fillets50 milliliters of olive oil3 onions3 cloves of garlic1 red bell pepper1 tablespoon of tomato paste400 grams of small baking potatoesChopped parsley to tasteLemon juiceSalt to tastePepper to taste

Preparation
- Preheat the oven to 350°F (180°C).
- Season the fish fillets with salt, pepper, and lemon juice. Set aside.
- Cut the onions into half-moons, finely chop the garlic, and slice the bell pepper into strips.
- In a frying pan, heat the olive oil and sauté the onion. Then add the garlic, bell pepper, and tomato paste, continue sautéing for a few more minutes.
- In a baking dish, arrange the fish fillets and potatoes. Pour the sautéed mixture over them and bake in the oven for about 40 minutes.
- Remove from the oven, sprinkle with chopped parsley, and serve with salad.
