Preparation

  1. Add butter and water into the flour, then knead until you get a smooth dough.
  2. Place in a bowl and cover with a plastic wrap and refrigerate.
  3. Add the sugar and water to a saucepan, then bring to a boil without stirring, until syrupy.
  4. Then, add the almonds and the yolks you've previously whisked and stir until you get a thick paste.
  5. Remove the dough from the refrigerator, and roll it out very thin, about 1/8-inch in thickness.
  6. Cut out circles in the dough with a 3-inch cutter.
  7. Place a teaspoon of the almond filling in the center of each circle, then fold, and seal with water.
  8. Brush the pastries with an egg wash, then bake at 200°C or 400°F for 20 minutes or until golden.
  9. Take out of the oven and while still hot and roll in powdered sugar.

In the instructions this recipe, it will look like half moons when I fold it and pinch with a fork? I just want to make sure I do it correctly

Dolores, you are not supposed to fold into half, you are putting the filling in the middle of the circle, then fold all around until you have a small ball like shape.
