Portuguese rice with peas and carrots is a flavorful rice dish often served with seafood, grilled meats, or hearty stews. It's made with onions, tomato sauce, paprika and fresh herbs, offering comforting, savory flavors.
Ingredients:
- 1 small onion
- 1/4 cup extra virgin olive oil
- 1/4 cup tomato sauce or you can substitute with 1 tablespoon of tomato paste
- 1/2 teaspoon of paprika
- 1/2 teaspoon of black pepper
- 1 teaspoon of hot pepper sauce
- 1 cup of peas and carrots thawed
- 2 cups of long grain rice
- 4 cups of water
- Salt for seasoning
4 to 6 servings
